  • 6 tbsp (100 g) natural peanut butter or natural almond butter
  • 2 cups (186 g) quick-cooking oats

  1. Preheat the oven to 350°F (177°C). Line an 8x8 inch baking pan with parchment paper, leaving extra paper hanging over the sides to make lifting the bars out easier.
  2. In a big mixing bowl, add the applesauce and peanut butter (or almond butter). Stir until completely combined and smooth. Pour in the quick oats and stir again until every oat is coated. Fold in any optional mix-ins now.
  3. Pour the batter into the prepared pan. Use a spatula to spread it out evenly from corner to corner and smooth the top.
  4. Bake for 15-20 minutes, or until the bars look set and the surface feels dry to the touch. Let the bars cool completely in the pan before lifting them out or cutting them to ensure they hold their shape. Store leftovers in an airtight container in the fridge.

Notes

For best results, use a smooth, sweetened cinnamon applesauce and a natural, drippy nut butter. If using unsweetened applesauce, add 1 tsp of cinnamon and 1-2 tbsp of maple syrup or honey. The most crucial step is to let the bars cool completely before cutting to prevent them from falling apart. For variations, you can substitute sunflower seed butter for a nut-free option or add up to a half-cup of mix-ins like mini chocolate chips, raisins, shredded coconut, or chopped nuts.
