  • 2 cups of cooked brown rice
  • 1 cup of cherry tomatoes, halved
  • 2 cups of shredded lettuce (romaine or iceberg)
  • 1/2 cup of sliced dill pickles
  • 1 cup of shredded sharp cheddar cheese
  • 1/4 cup of ketchup
  • 2 tbsp of yellow mustard

Method
 

Instructions
  1. Cook the brown rice according to the package directions.
  2. While the rice is simmering, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it's browned and cooked through. Season with salt and pepper, then drain off any excess grease.
  3. Wash and chop the fresh ingredients: halve the cherry tomatoes and shred the lettuce if needed.
  4. In a small bowl, whisk the ketchup and mustard together until well combined to create the sauce.
  5. Assemble the bowls by layering the warm brown rice in the bottom of each. Top with the cooked ground beef, followed by the shredded lettuce, cherry tomatoes, pickles, and a sprinkle of cheddar cheese.
  6. Drizzle the ketchup-mustard sauce over the top and serve immediately.

Notes

For the best results, avoid overcooking the beef. Season each layer of the bowl for enhanced flavor. For meal prep, store the warm components (rice and beef) separately from the cold components (lettuce, tomatoes, pickles) and combine just before eating. You can add garlic powder, onion powder, and Worcestershire sauce to the beef for more flavor.
