  • 1 large egg
  • ½ cup (about 2 oz) of grated cheese (Cheddar, pepper jack, or gruyere)
  • 1 teaspoon of finely chopped fresh thyme or rosemary (Optional)
  • Salt and black pepper, to taste
  • A pinch of cayenne pepper (Optional)

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). While it’s heating up, lightly toast your bread slices for 1-2 minutes on each side until just barely golden.
  2. In a small bowl, crack the egg and beat it with a fork. Stir in your grated cheese and the optional fresh herbs. Season generously with salt and pepper, and add the pinch of cayenne if using.
  3. Place your lightly toasted bread on a baking sheet. Carefully spread the egg and cheese mixture over each slice, going all the way to the edges.
  4. Bake for 10 to 12 minutes, until the egg and cheese mixture is puffed up, bubbly, and starting to turn golden brown.
  5. Let it cool for a minute before serving.

Notes

For the best texture, use a sturdy, thick bread and don't skip the pre-toasting step. You can blend cheeses like Gruyère and Parmesan for deeper flavor. For a quicker meal, use the Air Fryer Method: set it to 340°F (170°C), spread the mixture on untoasted bread, and cook for 8-10 minutes. Variations include a Faux Croque Monsieur (with Dijon and Gruyère), Caprese Tomato Toast (with mozzarella, tomato, and basil), and a Sweet & Savory version with apple, honey, and walnuts. The egg mixture can be prepped and stored in the fridge for up to 24 hours.
