- Preheat your oven to 400°F (200°C). While it’s heating up, lightly toast your bread slices for 1-2 minutes on each side until just barely golden.
- In a small bowl, crack the egg and beat it with a fork. Stir in your grated cheese and the optional fresh herbs. Season generously with salt and pepper, and add the pinch of cayenne if using.
- Place your lightly toasted bread on a baking sheet. Carefully spread the egg and cheese mixture over each slice, going all the way to the edges.
- Bake for 10 to 12 minutes, until the egg and cheese mixture is puffed up, bubbly, and starting to turn golden brown.
- Let it cool for a minute before serving.
Notes
For the best texture, use a sturdy, thick bread and don't skip the pre-toasting step. You can blend cheeses like Gruyère and Parmesan for deeper flavor. For a quicker meal, use the Air Fryer Method: set it to 340°F (170°C), spread the mixture on untoasted bread, and cook for 8-10 minutes. Variations include a Faux Croque Monsieur (with Dijon and Gruyère), Caprese Tomato Toast (with mozzarella, tomato, and basil), and a Sweet & Savory version with apple, honey, and walnuts. The egg mixture can be prepped and stored in the fridge for up to 24 hours.
