  1. Heat a small skillet over medium heat and add a light drizzle of olive oil.
  2. Cook the egg just the way you like it. For a sunny-side-up egg, cook until the whites are set but the yolk is still runny. For scrambled, whisk the egg beforehand and cook, stirring gently, until just set. Season with a pinch of salt and pepper.
  3. While the egg is cooking, lightly toast your ciabatta roll in a toaster or on a grill pan until it’s warm and slightly crisp.
  4. Begin building your sandwich on the bottom half of the roll. Start with a layer of fresh spinach, followed by the sliced tomato and avocado.
  5. Gently place the cooked egg on top of the avocado, then sprinkle generously with the crumbled feta cheese.
  6. If you’re using them, add your optional ingredients like sliced olives, roasted red peppers, or a few fresh basil leaves.
  7. Place the top half of the ciabatta roll on the sandwich, press down gently, and serve immediately while it’s warm.

For the best results, use high-quality, fresh ingredients. Toasting the bread is essential to prevent it from becoming soggy; you can also layer spinach first and pat the tomato dry to minimize moisture.
